My personal favourite not just because I love black olives, but because the original recipe was gifted to me by my mum's good friend in Cyprus kyria Veta.  It is this recipe which inspired me to create all the others and as such is my Signature Saffin.  

Olives, this staple of Mediterranean diet has a history that's 6000 years old. The bountiful olive which according to mythology was gifted to the Greeks by the goddess Athena remains a symbol of peace and goodwill to this day. Black olives are low in calories and contain a good amount of fibre and heart-healthy monounsaturated fat.

Coriander, a culinary herb brought to Britain by late Bronze Age invaders and used to flavour preserved foods and for medicinal purposes. The health properties of coriander are many including antirheumatic, antiarthritic, detoxifying, antiseptic, and antifungal, it also reduces bad cholesterol and blood pressure, aids digestion and is high in iron.
