Carrots, like other root veggies are perfect weaning food as they're naturally sweet in taste and soft when cooked.  They're also good for healthy eyesight due to beta-carotene that the liver converts to vitamin A.

Courgettes are silky soft, also rich in beta-carotene and their nutrients are in their skin so we never peel them.

Cheese, we use cheddar, is a great source of calcium and adds a bit of extra savouriness.

For this Saffie we chop the veggies in to small dice and mix them in raw so that the 15 minutes they spend in the oven to bake is enough to soften them without losing their nutrients through overcooking.
