This recipe found me going from Cyprus to an ingredient whose origin, surprisingly, is Italy!
Broccoli has been so universally adopted that its Roman origin that dates to about the 6th century BC, is rarely known. Equally surprising is that the biggest world producer of broccoli is not Italy, but China!
Inspiration for this Saffin came from what I think is a classic combination of two bold flavours, broccoli and blue stilton, this very English of cheeses whose 18th century name came from the Cambridgeshire village of Stilton though due to its Protected Designation of Origin status cheese made in the village cannot actually be called Stilton! Broccoli is hearty, tasty and a nutrition powerhouse for few calories, so on its own an excellent diet aid - a good carb, high in fiber, aids digestion, maintains low blood sugar and curbs overeating.
Blue Stilton like other blue cheeses has its own health benefits - its probiotic content improves the health of the digestive tract, plus it's a source of calcium and protein
