My son-in-law inspired me to create this one! He loves roast butternut squash sprinkled with spices as an accompaniment to a braais (a South African barbecue) and it's truly delicious!
Butternut squash is a winter squash that grows on a vine and has a sweet nutty taste similar to that of pumpkin. It's a versatile vegetable good to make soup, but also in stews and pies and it works well with spices that tone down and complement its sweetness. I dice it, sprinkle a cloud of spices over it, massage it with good olive oil and then I roast it.
Butternut squash is low in fat, and delivers a good dose of dietary fibre making it an exceptionally heart-friendly choice. It also provides good amounts of potassium that's important for bone health, and vitamin B6, essential for the proper functioning of both the nervous and immune systems.
