A taste of early Summer in two bites!  Because when food was eaten according to what was in season, peas and broad beans were fresh, tender and plentiful in early summer.  

Peas are a vegetable right? Well actually they’re a fruit…botanically speaking, because pea pods contain seeds (the peas) that have developed from the ovary of a flower!  Peas were cultivated mostly for their dry seeds as far back as the Neolithic dawn of agriculture.  Fast forward to early modern Europe of the 17th century and green garden peas started to be eaten immature and fresh as an innovative luxury! 


Broad beans are also among the most ancient plants in cultivation and along with lentils, peas and chickpeas became part of the eastern Mediterranean diet around 6000 BC, or earlier..no wonder I love them both in their fresh green form or as dried fava beans they must be in my genetic blueprint! 


My recipe was again inspired by a favourite family dish, a medley of young peas, broad beans and dill cooked in olive oil and freshly squeezed lemon juice.  For this delectable little Saffin I blanche peas and broad beans, chop lots of fresh dill and a smaller amount of fresh mint and spring onions and tenderly fold them in to my olive oil-based chickpea batter.


Garden Peas are even sweeter when boiled or steamed because cooking breaks down the cell walls and makes the taste sweeter and the nutrients easier to absorb. Peas have plenty of protein, fibre, and are a vitamin powerhouse - A, B1, B6, C and the osteoporosis-fighting K, as well as potassium and iron, plus they’re pretty low in calories.


Broad Beans are very low in saturated fat, cholesterol and sodium and are also a good source of dietary fibre, protein, phosphorus, copper, manganese, and folate and at 23%+ of daily recommended levels they are also one of the highest plant sources of potassium. 

Dill, whose wispy fernlike leaves are aromatic and used to flavour many foods has traditionally also been used as a stomach soother and an insomnia reliever
