My inspiration for this recipe was the brilliant Yotam Ottolenghi, but one I adapted to my own taste e.g. roasting the cauliflower instead of boiling it, omitting the cheese and eggs and making it entirely vegan and gluten-free.

Cauliflower is such an amazing vegetable, not only loaded with vitamins, one 100g serving contains 77% of the daily recommended Vitamin C, but it's also low calorie and you burn more calories digesting it than it contains.  When I'm trying to lose a few pounds I include cauliflower in my diet at least twice a week - delicious roasted with fresh tomatoes and garlic, as cauliflower rice, cauliflower cheese, even as a pizza base, its robust taste makes it so very satisfying to eat.

Cauliflower, is detoxifying, anti-inflammatory, boosts heart health, fights cancer, especially combined with turmeric (see Saffin list of ingredients), is packed full of vitamins, minerals and micronutrients, aids digestion and boosts brain health...and it's super-tasty to eat in Saffin form!
